Winemaster's Notes:

After harvest in mid-October, grapes were de-stemmed, lightly crushed and cold-soaked for 54 hours before fermentation. Skin contact was four weeks before pressing, settling and racking into barrels. Barrels were a combination of French oak and the wine spent 16 months aging before blending and bottling. The wine displays aromas and flavours of black cherries, cassis and mocha with firm, supple tannins and an extended spicy finish. Try with lamb, grilled salmon and vegetarian entrees. Cellaring potential estimated 3-5 years.
